"Almost Jewell's Peach Cobbler"
I thought this invention was doomed but it turned out to be huge success! To read the story behind the making of "Almost Jewell's Peach Cobbler" click "Behind the Scenes"
INGREDIENTS
- (1) Box Extra Moist Yellow Cake Mix
- (1) Package Instant Vanilla Pudding
- (1) Large Can Peaches In Syrup
- (1) Small Can Peach In Syrup
- Dark Brown Sugar
- Butter
- All Purpose Flour
- Cinnamon
ACT 1: Follow the instructions on the CAKE BOX, add the package of PUDDING MIX thoroughly and pour into a large (bottom and sides greased) deep dish baking pan. Pour in the CANS OF PEACHES AND SYRUP stirring into the cake batter for even distribution. Sprinkle with CINNAMON and start baking.
ACT 2: While ACT 1 is baking, prepare a STREUSEL TOPPING: 1 CUP PACKED BROWN SUGAR, 2/3 CUP FLOUR, 1/2 CUP BUTTER, 2 HEAPING TSPS CINNAMON. Thoroughly mix until crumbly.
PEEK in the oven to see if COBBLER-CAKE is starting to form a top of its own. Once, this happens, carefully remove from the oven and sprinkle the STREUSEL TOPPING evenly over the top and, with the end of a wooden spoon or spatula, slowly swirl deeply into the COBBLER CAKE evenly.
Continue baking (this is where the cake box timing directions won't apply) until it passes the DONE TEST. I usually insert a chop stick or a wooden kabob skewer...whatever.
Serve while warm.

"ALMOST JEWELL'S PEACH COBBLER"
How It Happened....
It began with a request from my new sweet-tooth friend and neighbor, David who I affectionately refer to as my "Lab Rat". David will fearlessly try any of my inventions.. It's a good arrangement. David gets complimentary desserts and I get unedited truth. It works for both of us.
So, David asked if I could whip him up a Peach Cobbler for Sunday's NFL game and I told him that my last Peach Cobbler could have been a featured prop in a low-budget horror movie. He said, "Just whip up one of your crazy inventions and see what happens." So I did. Everything started going wrong and the more I tried to fix it, the more certain I became that it was going be a total bust. So, when I sent the cobbler down the street to David, I included a note that said I would refund all monies (on custom-requests, David buys the ingredients). I know. I'm cheap.
Well, surprise-surprise. In his written critique ( I use a short simple critique form), David raved, " ...and it was almost like my mother's..." Without thinking, I asked, "What is your mother's name? Sounds like I could learn a thing or two from her." Things got suddenly quiet and sort of stayed that way. "Jewell. Jewell Carter." David said solemnly and I learned that she had recently, sadly passed away. "She was the best cook in Knoxville!" David celebrated. Then, without missing a beat, I blurted out, "Then, I'll name it Almost Jewell's Peach Cobbler!"
"Can you whip me up one for this Sunday's game?" David asked with a smile returning to his face as he went out the door.
Hence, the name and this recipe is dedicated to her.
