Bored with the same old brownies? Well, hello comrade! Try your hand at these easy-to-make scrumptious yummies. 

I am no baker. It's all too precise and I'm too much of anarchist to follow rules when I want to have a good time which is what cooking is to me. Other people golf. I cook with as few rules as possible. So, some of  my measurements are going to be more "guesstiments". Plus, this recipe keeps evolving and surprising me since I started playing with it and it should you too!

Here we go...

ingredients:  The Brownies

  • (1) box chewy-fudgy brownie mix (Duncan Hines, Betty Crocker, Pillsbury, etc...)
  • (1) box instant chocolate pudding mix (sugar free or regular)
  • (2) heaping tbsp Hershey's Special Dark Cocoa (or more to your choco-tastes)
ingredients:  The Filling
  • Vanilla cake frosting (off-the-rack: Duncan Hines, Betty Crocker, Pillsbury, etc.)
  • Confectionery sugar
  • Flavorings: a virtual pot pouri of choices...here are some examples: Instant Coffee, Peppermint Extract, Almond Extract, Cherry Extract, note: I haven't tried these liqueurs yet but I think they could be exquisite:  Kahlua, Amaretto, Creme de Menthe, Frangelica, etc...)

    Here's what you do in 3 quick Acts.

ACT 1

  • Make the brownies according to the simple directions on the box ADDING the chocolate pudding mix and the Hershey's Special Dark Cocoa.
  • Bake until you see little cracks and crevasses in the centers
  • Cool to room temp
  • Refrigerate
  • While your brownies are refrigerating MAKE THE FILLING
ACT 2
  • In a separate bowl scoop out your Vanilla Frosting
  • Then DROP by DROP add your flavorings and keep tasting until your satisfied. 
  • If the filling gets a little thin because of adding liquid extracts, slowly add some confectionery sugar until you get a rich creamy consistency.  This won't happen with instant coffee or peanut butter and you probably will have to add a little milk (skim, %, or regular) to make it more malleable.

Refrigerate  your filling while you take out your brownies and cut them into square

ACT 3

  • Cut up your brownies as your normally would: squares
  • Cut these squares in half (cut these in half again for brownie bites)
  • Generously dollop your filling of choice on the bottom half and sandwich with the top half
  • Refrigerate and VIOLA!

Here's the best part of making this "recipe"...INVENTION! Play with it!  Come up with different fillings and flavorings. Customize it to your own tastes and to the tastes of your sweet-tooth audience. And let me know what happens.
